BBQ Taco Nachos

Well summer is definitely here. Our gardens are growing and we are beginning to enjoy fresh salads from it. As the heat rises outside it means cooking indoors is not an option.

I am always trying to come up with ways to prepare meals outside. I move our toaster oven outside onto the patio and prepare smaller portions of our staple dishes. I lovingly call it my “outdoor kitchen”.

This week I had a craving for taco nachos. I couldn’t bring myself to cook on the stovetop so I decided to try it out on the BBQ. Introducing BBQ Taco Nachos.

How to make BBQ Taco Nachos

First I pre-heated the BBQ to medium heat. Then I lightly coated a tinfoil lasagna pan and cooked my ground turkey and onions.  Next I added taco seasoning as directed when it was ready.

While the meat was cooking I prepared another lasagna pan with tortilla chips, shredded cheese, tomatoes, onions, and peppers. Once the taco meat was ready I topped the nachos with it.  I placed the nacho pan onto the BBQ and cooked them. I started with it on the bottom rack but I moved it to the top rack to make sure the tortillas didn’t burn.

What a great treat to be able to have hot nachos without a hot house! I will definitely be making these again. Happy Summer time!
